• Soak some half green moong dal for few hours, then grind it into a paste.
  • Make thin pan cakes of it with very little olive oil and keep it aside.
  • For a sauce, blanch 6-7 tomatoes, peel and puree them along with lots of garlic and fresh red chilly which is easily available in the market.
  • Cook on a slow flame. Add salt, oregano and basil with 1 tsp of rice flour to thicken the consistency.
  • Take spring onions, mushrooms, red and yellow bell peppers, carrots and sauté it in little olive oil and add a little salt and black pepper for taste.
  • Take a baking dish, keep one pancake on that and a add a layer of sauté veggies with the sauce.
  • Take another pancake and layer it with some oil and keep them in the microwave to heat.
  • Better than a cheesy enchilada..
  • You can also add tomatoes to the sauce. (A rich source of protein and Vitamin B1 and protein that repair the body tissue)
